OK so this week is all about eating what we have in the fridge, because we are going on vacation next week.
Operation EMPTY FRIDGE IN MY BELLY NOW has begun.
But today in my plan, I have to go low carb.
Like--- 25g of carbs in the WHOLE DAY.
BBQ sauce has 15 grams in 2 Tablespoons
Shakeology has 15 grams in it
ONE SINGLE APPLE is 25g.. you feeling me?
All of my carbs today have to come from vegetables and nuts.
Fine by me!
I don't really miss sandwiches, wraps, pasta, and quinoa.
Usually when I eat a lot of carbs, including wine, I go through my days HANGRY.
Even complex carbs leave me feeling hungry and sometimes angry.. poor Eric!
I actually thought I'd be HANGRY on these days, but surprisingly, I get a boost of energy when I have low carb days, intermittent with higher carb (100g) days.
Pretty nice surprise.
But when the dreaded "What's for dinner" question came up earlier,
Detective Lisa went on the hunt to find a low carb, but delicious meal of food!
You know I'm a foodie, right?
So I found this recipe tonight for Greek pasta salad using zoodles.
Zucchini, cherry tomatoes, olives, feta cheese, red onion, cucumber with an olive oil, lemon, oregano dressing.
I just whipped it up in 5 minutes and it has to marinate now while I teach my fitness classes.
It's freaking delicious.
I would have made it earlier, but we didn't have cucumber and feta.
I said to Eric, we can just use more zuchinni and the blue cheese we have in the house, right?
UMM NO. Changes the whole taste of the salad, he tells me.
This is why I consult with him first, or he does the majority of the cooking.
Sometimes my "Let's do it, I don't have time for this" plan backfires and I guess he's right (mark that down in the books) that you can't mess with a food recipe.
Here's is the recipe I used. I will probably throw some chicken breast in it for protein as we already have those cooked for the week and my lovely husband made a quick pit stop at the store to pick up cucumber and feta.
